Coffee Balsamic Braised Ribs

Ingredients

Scale
  • 4 to 5 lb. bone-in beef short ribs, each about 3 inches long
  • 3/4 cup cold coffee
  • 1/2 cup Balsamic vinegar
  • 1 red onion, chopped in quarters
  • 1 tsp. sea salt
  • 1/2 tsp. black pepper
  • 1 1/2 tsp. smoked paprika
  • 1 tsp. coconut oil (or lard)

Instructions

  1. Rub the smoked paprika into the short ribs.
  2. Melt the coconut oil in a large skillet over medium-high heat, and sear the short ribs 1-2 min per side or until they are slightly browned.
  3. Place the red onion at the bottom of your slow cooker. Then lay the ribs on top of the onions. Add the balsamic vinegar, coffee, sea salt and pepper.
  4. Cover and cook on low heat for 6 hours or until the meat is tender enough to fall apart with a fork.
  5. Shred the meat off the bones and serve while warm.
