Frittata

Ingredients

Scale
  • 1/2 onion, chopped
  • 2 glove of garlic, chopped
  • 1/2 red pepper, chopped
  • 5 asparagus stem, chopped
  • 1/2 bunch of fresh cilantro, chopped
  • 1tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp sea salt
  • cracked black pepper
  • 2 tbsp. coconut oil
  • 6 eggs

Instructions

  1. Preheat oven at 350F
  2. In a pan melt the coconut oil and saluted the onion and garlic for 3-4 minutes or until transparent. To the pan add the red pepper and continue sautéed for 4 minutes. Set aside.
  3. While the veggies are cooking in a medium mixing bowl beat eggs and then add sea salt, black pepper, turmeric, cumin and mix well ensuring there is no lump left from the turmeric.
  4. To the egg add the cilantro and sun-dried tomatoes and the cooked veggies. Mix well.
  5. In an oven proof fry pan or oven proof 8×8 dish add the egg mixture.
  6. Cook in the oven for 10 minutes.
  7. Serve and enjoy!
