Balsamic Chicken Liver Pate

Ingredients

Scale
  • 1 lb. organic liver (chicken gives a softer taste but can be done with any liver)
  • 1 1/2 onion, chopped
  • 1/2 cup balsamic vinegar
  • 4 gloves garlic
  • 1 tsp. Dijon mustard
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 tbps butter + up to 1/4 cup of butter

Instructions

  1. Saute the liver and onions in a couple of tablespoon of butter until the liver is browned and the onions tender.
  2. Add the balsamic vinegar, mustard, herbs and lemon juice and cook uncovered until most the liquid has evaporated.
  3. Transfer the mixture into a food processor and blend to a smooth paste along with the rest of the butter 1 Tbsp. at a time it reaches smooth, creamy consistency.
  4. Add salt and pepper to taste.
  5. Enjoy!
