Chewy Molasses Cookies


  • 2 cups almond flour
  • 1/4 cup arrowroot flour
  • 6 tbsp. coconut flour
  • 1 tsp.ground cinnamon
  • 1 tsp. grounded ginger
  • 1/2 tsp. clove
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 1 large egg, gently beaten
  • 8 tbsp. unsalted butter or ghee, melted
  • 1/3 cup raw honey
  • 1/3 cup unsulphured organic molasses

  1. Preheat oven to 375 F and adjust rack to middle position.
  2. Mix flours, cinnamon,ginger, clove baking soda and salt in a large mixing bowl.
  3. Stir in egg, melted butter, honey and molasses until combined. Let dough sit for 5 minutes.
  4. Using a 1 1/2-inch cookie scoop, scoop a dough ball and drop it into a small bowl with your rolling sugar. Roll the cookie around (the dough will be a bit tacky and soft), then gently roll in your hands to form a ball.
  5. Set the dough ball on a baking sheet lined with parchment paper. Continue with remaining dough.
  6. Bake for 10-12 minutes. Let cool for 10 minutes on the baking sheet.
