Balsamic Chicken Liver Pate
- Prep Time: 15

- 1 lb. organic liver (chicken gives a softer taste but can be done with any liver)
- 1 1/2 onion, chopped
- 1/2 cup balsamic vinegar
- 4 gloves garlic
- 1 tsp. Dijon mustard
- 1 sprig fresh rosemary
- 2 sprigs fresh thyme
- 1 tbps butter + up to 1/4 cup of butter
- Saute the liver and onions in a couple of tablespoon of butter until the liver is browned and the onions tender.
- Add the balsamic vinegar, mustard, herbs and lemon juice and cook uncovered until most the liquid has evaporated.
- Transfer the mixture into a food processor and blend to a smooth paste along with the rest of the butter 1 Tbsp. at a time it reaches smooth, creamy consistency.
- Add salt and pepper to taste.
